El uso de compuestos acidulantes -ácidos orgánicos (débiles), en la conservación y mejoras de las propiedades sensoriales en alimentos es extenso y variado dependiendo de la matriz alimentaria y las razones tecnológicas de su empleo. En particular, los ácidos que contienen uno o más grupos carboxilos son aditivos alimentarios relevantes (Bacon, 2002). Estos ácidos orgánicos son en general intermediarios o productos finales de ciclos metabólicos básicos que ocurren en una gran variedad de organismos vivientes. Entre estos se incluyen el ácido acético, cítrico, glucónico, fumárico, láctico, málico y tartárico. Su producción industrial se realiza en su mayoría a través de métodos biológicos y los ubica como un prototipo en la Biotecnología Alimentaria. La Unión Europea aprobó recientemente el uso de ácido láctico en las canales bovinas a través del Reglamento UE 101/2013 en el cual autoriza su empleo en canales enteras, medias reses y cuartos únicamente mediante pulverización o nebulización en concentraciones comprendidas entre el 2% y 5%. El ácido láctico debe cumplir las especificaciones establecidas en el Reglamento UE 231/2012 y en condiciones controlables y comprobables dentro de un sistema de gestión basado en los principios de HACCP. Sin embargo, el empleo de los ácidos orgánicos en las playas de faena de bovinos es controversial en algunos países, ya que se tiene el concepto de que su inclusión podría enmascarar fallas en las buenas prácticas de manufactura y en los procedimientos de sanitización (EFSA, 2011). Su utilización, por otro lado, además de las ventajas mencionadas no tendría impactos ambientales negativos, como tampoco riesgos toxicológicos asociados a su uso (EFSA, 2011).

Additives for Polyolefins is a unique quick-reference resource for those who create or use polyethylene and polypropylene compounds—the most commercially important family of plastic materials, making up close to half of the volume all plastics produced and used. The Model Driven Architecture defines an approach where the specification of the functionality of a system can be separated from its implementation on a particular technology platform.
