Evaluación de las condiciones de extrusión necesarias para elaborar harina de maíz con características similares a las de una harina nixtamalizada

Objectives: obtain an extruded precooked maize flour by extrusion to make “tortilla”; establish a methodology to prepare “tortilla”; analyse the effect of endosperm hardness and extrusion conditions on the suitabilitity for making tortilla. A dent maize (Pioner 30R76) and a hard red (Dekalb 764), were used. For extrusion was adopted a factorial design, taking grits moisture (27 to 35%) and extrusion temperature (114 to 150ºC) as independent factors. It effect on extruded flour was analized using surface response, evaluating % of starch damage (AD), water absorption (AA), water solubility (S), retrogradation at 50ºC (Retro), Consistency at 95ºC (C95) and with microscopy observation. To evaluate suitability to make tortilla, Penetration, Mass Moisture and “Score”, were determinated. A commercial “nixtamalized” flour from Mexico (“Maseca”), was used as reference sample. Results shows (AD and AA) a lower cooking degree corresponding to hardest endosperm (Dekalb 764), than Pioner 30R76. Samples from Dekalb 764 were softer than “Maseca”. Mass Moisture: “Maseca” is in between of Pioner 30R76, and higher than Dekalb 764 (except 150ºC-27%H, with similar value to “Maseca”). “Score´s” higher values were obtained for Pioner 30R76, while to Dekalb 764 almost all samples were not acceptable. Proposed methodology has permitted to obtain by extrusion, precooked flours to make tortilla, watching best results in soft endosperm maizes.Palabras clave – provistas por el repositorio digital
