Alicyclobacillus represents the most serious problem in industries of drinks based on fruit juice. It does not produce any risk for human health. The deterioration is shown by the formation of off-flavors and off-odors. The occurrence of Alicyclobacillus spp was analyzed in apple and pear juice in different stages and in used and produced waters of itself. The presence of Alicyclobacillus was confirmed and its capacity to produce gualacol. The kinetic parameters of thermic inactivation in a strain of Alicyclobacillus acidoterrestris isolated fom the plant was determined in apple juice . The times of decimal reduction to 88, 90, 92 and 95 degrees centigrades were respectively 15,63, 9,21, 6,23 and 3,50 minutes. The constant of thermic resistance was 10,9 degrees centigrades. Sanitizers over spores of the same strain in aqueous suspention were evaluated. OXI5 (peracetic acid , hydrogen peroxide ) to 0,15 per cent in 30 minutes reduced the amount of spores 2,24 logaritmic orders. A similar result was obtained to the double of concentration of sanitizers in half the time. Vortexx (hydrogen peroxide, peracetic acid , octanoic acid) to 0,1per cent reduced the amount of spores 2,51 logaritmic orders in 30 minutes. A similar reduction was obtained to 0,2 per cent in 15 minutes. Sodium hypochlorite (500 and 1000 parts per million of active chlorine) in a 9 minutes treatment reduced the amount of spores 1,17 and 1,68 logaritmic orders respectively.
