Intended for researchers working on meat and animal sciences, as well as product development professionals in the food industry, the Journal of Muscle Foods publishes primary research and review articles that address both basic and applied science related to beef, lamb, veal, pork, poultry, fish, seafood, and muscle of other species consumed by people. Recent articles included in this prestigious journal have covered the effects of pH on the quality of pork and the effects of dark storage time and florescent display lighting on beef.
