In Argentina, only a few varieties of olive are cultivated. European immigrants, who imitated their local traditions, introduced those varieties. In our country, some varieties has low industrial yield or bad conservation of their olive oils. Increasing cultivars diversity could improve the Argentinian olive oil quality. Mendoza has an Olive Germplasm Bank with 74 varieties. The aim of this work was to evaluate fruit and oil characteristic in olive varieties included in Mendoza´s Olive Germplasm Collection to identify those with high quality virgin olive oil for local environmental conditions. Eighteen varieties from the collection, selected previously by their high oil content and low percentage of humidity, were evaluated during two growing seasons (2013-2014 and 2014-2015). A sample of 20 kg per plant were harvested (three replications for variety). The maturity index, pulp / stone ratio, average weight, water content and oil content were determined on a sample of 2 kg of olives fruit. The oil was extracted from fruit samples of 15 kg using a continuous two-phase and cold system. Oil industrial yield, free acidity, oxidative stability, total phenolic compounds content, extinction rates and phenolic profile were determined in each oil sample. The 18 olive varieties showed quantitative and qualitative differences in all evaluated characteristics in fruit and virgin oil. Based on the results obtained in this work, five varieties were selected (‘Nebbio’, ‘Villalonga’, ‘Piangente’, ‘Canino’ and ‘Nevadillo Blanco’) due to high industrial yield, prolonged oxidative stability and high phenolic content.
