Several wastewaters are generated in the brewing process. Washing effluents from machines and equipment represent the largest volume and are treated in plants that include anaerobic and aerobic reactors. Certain effluents with high organic load, such as surplus yeast and discarded beer can generate drawbacks in the treatment systems if they are mixed with the washing streams. Surplus yeast consist of a yeast suspension in beer and representing up to 3% of the volume of beer produced. Discarded beer comprises the internally rejected beer and the beer which returns from the Market, and represents 0.6-1% of the volume of beer produced. In this thesis the use of these effluents as raw material of productive processes was studied. The technical and economic aspects of the follows processess were evaluated: Recovery of ethanol from the liquid fraction of these effluents; Production of additional bioethanol by alcoholic fermentation of the remaining carbohydrates; and Production of acetic acid (beer vinegar) by fermentation in submerged culture using the liquid fraction of these effluents. The ethanol recovery, followed by the hydrolysis and fermentation of the vinasse, allowed a reduction of the organic load by 88%, resulting in turn an economically profitable process. The production of beer vinegar practically eliminates the treatment needs, being an extremely profitable process with a capital recovery period of 2 months.Palabras clave – provistas por el repositorio digital
