Lipid Glossary 2 is a handy reference for a wide range of lipid scientists and technologists, as well as for those involved in the trading of these materials.

The major part of the book is the glossary which contains brief and simple definitions, such as the names of fatty acids and lipids, the major oils and fats, terms associated with their analysis, refining, and modification, and the major journals and societies concerned with lipid chemistry. Entries are arranged alphabetically for ease of reference and there are cross-refernces between sections. Many entries have full references to further sources of information.

The earlier book A Lipid Glossary (first published by The Oily Press in 1992) has been completely rewritten for this new version. The entries have been extended and increased in number to over 1200. The number of graphics has been raised to over 180. As a consequence, the new book has more than twice as many pages as the old version. In this second edition, Edwin Frankel has updated and extended his now well-known book Lipid oxidation which has come to be regarded as the standard work on the subject since the publication of the first edition seven years previously. His main objective is to develop the background necessary for a better understanding of what factors should be considered, and what methods and lipid systems should be employed, to achieve suitable evaluation and control of lipid oxidation in complex foods and biological systems.

The oxidation of unsaturated fatty acids is one of the most fundamental reactions in lipid chemistry. When unsaturated lipids are exposed to air, the complex, volatile oxidation compounds that are formed cause rancidity. This decreases the quality of foods that contain natural lipid components as well as foods in which oils are used as ingredients. Furthermore, products of lipid oxidation have been implicated in many vital biological reactions, and evidence has accumulated to show that free radicals and reactive oxygen species participate in tissue injuries and in degenerative disease.

Although there have been many significant advances in this challenging field, many important problems remain unsolved. This second edition of Lipid oxidation follows the example of the first edition in offering a summary of the many unsolved problems that need further research. The need to understand lipid oxidation is greater than ever with the increased interest in long-chain polyunsaturated fatty acids, the reformulation of oils to avoid hydrogenation and trans fatty acids, and the enormous attention given to natural phenolic antioxidants, including flavonoids and other phytochemicals.

In Lipids: Structure, Physical Properties and Functionality, Professor Kåre Larsson, Peter Quinn, Kiyotaka Sato and Fredrik Tiberg have provided an up-to-date description of the diversity of lipid molecular arrangements in different physical states as a basis for the understanding of lipid functionality in biological and technical systems.

Lipids are components of many complex systems, some of which are natural in origin, such as the cell membranes of living organisms, and others created by human intervention, such as food emulsions. Scientists and technologists working on complex systems containing lipids need to relate composition and structure to behaviour, whether this is in the formulation of food products, development of drugs and drug delivery systems, study of living cells, or creation of new cosmetics, to name a few examples.

This book was originally planned as a new edition to Kåre Larsson’s popular book Lipids: Molecular Organization, Physical Functions and Technical Applications published by the Oily Press in 1994. However, the subject area had to be expanded to such an extent that the one author could no longer cover it. Instead of resorting to the usual edited book with each chapter written by a different author, the three well-known scientists named above were invited to act as co-authors with Kåre Larsson. As a result Lipids: Structure, physical properties and functionality is not a second edition, but a new book with a new ISBN number.

Functional foods and nutraceuticals have become ‘hot topics’, with an increasing number of books, college courses, and meetings devoted to this area of interest. Foods can be regarded as functional if they can be satisfactorily demonstrated to contain bio-active molecules that reduce the risk of disease or act positively to promote good health.

The active ingredients and components of functional foods and neutraceuticals often include lipids. They are required in their own right and also for the important minor components such as carotenoids, tocols, and sterols which accompany the oils and fats. This is the first book to address specifically the use of lipids in functional foods and neutraceuticals and it will be essential reading for those who produce the lipids and those who seek to incorporate them into appropriate food products.

The first chapter is an overview of the development of functional foods. This is followed by chapters devoted to materials which are either lipids or are compounds that are fat-soluble and co-occur with oils and fats. These include: carotenoids, tocopherols, phytosterols, n-3 (omega-3) oils, diacylglycerols, structured lipids, sesame oil, rice bran oil, and oils and preparations containing palmitoleic acid, y-linolenic acid, stearidonic acid, or conjugated linoleic acid.
