Protective clothing protects wearers from hostile environments, including extremes of heat and cold. Whilst some types of protective clothing may be designed primarily for non-thermal hazards (e.g. biological hazards), a key challenge in all protective clothing remains wearer comfort and the management of thermal stress (i.e. excessive heat or cold). This book reviews key types of protective clothing, technologies for heating and cooling and, finally, modeling aspects of thermal stress and strain.
  • Explores different types of protective clothing, their uses and their requirements, with an emphasis on full-scale or prototype clothing, including immersion suits, body armour and space suits
  • Considers novel and commercial technologies for regulating temperature in protective clothing, including phase change materials, shape memory alloys, electrically heated clothing and air and water perfusion-based cooling systems
  • Reviews the human thermoregulatory system and the methods of modelling of thermal stress in protective clothing through various conditions, including cold water survival and firefighting

Consumers favour foods with fewer synthetic additives, but products must also be safe to eat and have a sufficiently long shelf-life. Biopreservation, the use of a product’s natural microflora and its antibacterial products for protection against pathogens and spoilage, is a method of growing interest for the safe production of high quality minimally-processed foods. This book provides an essential overview of key topics in this area.

Initial chapters review central aspects in food biopreservation, including the identification of new protective cultures and antimicrobial culture components, existing commercial fermentates including nisin and natamycin and the potential of novel fermentates and bacteriophages to improve food safety. Part II concentrates on the use of protective cultures, bacteriocins and bacteriophages to control the carriage of pathogenic microorganisms in food animals and to modulate human gut microflora. Chapters in the final section of the book review biopreservation of different types of foods, including milk and dairy products, fermented meats, fresh seafood and fruit. A review of active packaging for food biopreservation completes the volume.

Edited by a leading expert, Protective cultures, antimicrobial metabolites and bacteriophages for food and beverage biopreservation is a fundamental reference for researchers and food industry professionals working to ensure the safety of the food supply.

Protein and Amino Acid Nutrition describes the state of knowledge concerning the nutrition of proteins and amino acids. Topics range from the effect of some therapeutic agents on protein and amino acid nutrition, to species and age differences in amino acid requirements; utilization of D-amino acids; effect of proteins and amino acids on the growth of adult tissue in vitro; and amino acid requirements of animals and young adults.
This volume is organized into 16 chapters and begins with an overview of the nutritional implications of the metabolic interrelationships of amino acids. The next chapters discuss experiments that tested the differences in amino acid requirements due to the differences in age and in species among animals, the biochemical individuality of amino acid requirements, and the utilization of dietary proteins. This book explains the synthesis of tissue proteins in relation to the essential amino acids; the link between food energy and nitrogen metabolism; and the use of the repletion method to measure the nutritive value of proteins, protein hydrolyzates, and amino acid mixtures. The final chapter discusses the nutritional needs of the older age groups.
This book is intended for scientists, students, and researchers interested in human and animal nutrition.
