The soybean is well known throughout the world, especially in Eastern countries, for their beneficial effects on human health. There is a vast literature detailing the many salutary effects of soy, including highlighting the anticancer effects, antioxidants, cardiovascular. The components of soybeans more biologically active are known as isoflavones. Because the latter have a great structural similarity with human estrogen, the association of the same with the reduction of peri-and post-menopausal symptoms are widely studied. The literature reviewed to develop this paper basically covered the biological aspects of isoflavones; distribution in the soya beans and throughout the manufacturing process of the drink soy and tofu, and the development of methods of extraction of isoflavones since the different samples and the analytical methodology used. It was developed at the laboratory and imitating industrial processes, drink soy and tofu from different varieties of transgenic and non-transgenic seeds. The method was developed and validated high-performance liquid chromatography with UV detection. We evaluate the content of the same seed and every byproduct of processing. The results showed a wide variation in the content of both isoflavones in different types of seeds tested. Moreover, it was noted how the process of industrialization of the products resulting impact on the content of isoflavones.
