Hydrocolloids of different origins have wide application in different industries. Among them, gum Arabic (GA) leads the world market for gums used in microencapsulation. However, their periodic scarcity and costs, drive the search for alternative compounds. Brea gum (BG) is an exudate of Cercidium praecox tree similar to GA in composition and properties, and of national production. In this context, the objective of the thesis was to study the physicochemical, rheological and functional characteristics of BG, and the effect of different treatments on its emulsifying and encapsulating properties. The physicochemical characterization of BG presented 82.60% w/w of polysaccharides and 7.52% w/w of proteins. Three main fractions were determined: a polysaccharide of 2.79 x 103 kDa, majority; a protein-polysaccharide complex of 1.92 x 105 kDa and a protein fraction of 6 to 66 kDa. The aqueous solutions presented a pseudoplastic behavior at low deformation rates and Newtonian fluid at higher speeds. The emulsifying capacity was evaluated with 10 and 20% w/w solutions, obtaining small droplets (500-600 nm) and high stability. Corn oil and limonene were microencapsulated by spray drying. At higher concentrations of BG, higher corn oil encapsulation efficiency and greater retention and protection from oxidation of limonene were obtained. Finally, physical methods for BG modification were evaluated, among which the thermal treatment achieved remarkable improvements in the emulsifying and encapsulating properties.
